Roasted Red Pepper & Black-Eyed Pea Salsa

I am always on the look out for easy dipping snack food and last week on fall break my friend Susan made this AMAZING dish! However, although her recipe calls this a "salsa" it's much more than that.  You can easily serve this as a side dish or toss it on tacos or put it in a salad.  So, don't limit your options!

I can't wait for you to try this simple recipe.

Here's your ingredient list:

  • 1 can Black Eyed Peas
  • 1 jar roasted red peppers
  • 1 green onion
  • 2 Tablespoons chopped cilantro (not pictured - oops!)
  • 2 Tablespoons lemon juice
  • 3/4 tsp cumin
  • 1 tsp hot sauce (add more to taste)
  • Salt & Pepper to taste

Begin by washing the black eye peas and setting aside to drain thoroughly (Note: I'm making a double recipe in the pictures, so the quantity will look different than what you see with a single recipe!)Chop the green onion and red peppers.Combine all of the ingredients in a bowl and top with lemon juice and spices.Stir together and adjust the seasoning to taste.If you do decide to serve as a salsa, serve with sturdy chips (I like pita chips).
