Lemon Shrimp on the Grill

Spring is giving way to summer, so your grill should be ready for full-time action! If you haven't done so already, dust the pollen off the patio furniture and fire up the BBQ!  I can't wait to make grilled pizza; however the first recipe I used on the grill this season is a simple, delicious shrimp dish.

Here's what you need:

  • 2 lemons, juiced (about a cup)
  • 1 Tablespoon lemon zest
  • 1 Tablespoon honey
  • 1 Tablespoon chopped fresh rosemary
  • 1 package raw, jumbo shrimp
  • 2-3 summer squash, cut into 1 inch rounds
  • 2-3 zucchini squash, cut into 1 inch rounds
  • 1 bell pepper, cut into 1 inch squares

Start by mixing the first four ingredients (lemon juice, zest, honey, rosemary) to make the marinade. Toss in the shrimp and squash to the marinade for 30-60 minutes.Spray the grill and a grill basket with non-stick grill spray. Preheat to 350 degrees.  If you don't have a grill basket, you can use foil.Place the shrimp mixture in the basket in (roughly) a single layer.I almost always have more than my little basket carries, so I usually put the large squash pieces on the side.Shrimp cooks super fast when placed directly on the grill (flip it once and you'll be done in 2-3 minutes). In a basket, they can take up to 10 minutes to cook and come out more moist.  Serve to your family who will, undoubtedly, be drooling.Happy grill season!!
