Citrus & Beet Salad

I've been known to be a little ambitious at dinner time. In other words, I frequently under-estimate the prep time I need to finish a meal and I over-estimate my ability to pull everything together at the last minute.  The casualties of my poor clock-management skills are almost always the vegetables.

As a result, steamed broccoli, squash, and peas are over-represented on our dinner plates. (zzzzzzzzz)

If so (and even if not), you're going to LOVE today's installment.

This recipe uses only five ingredients which, for me, are standard pantry/refrigerator/garden items.  I adapted the recipe from an old, out-of-print Trader Joe's cookbook which had some more esoteric ingredients. You should feel free to play with the list as well.

Plus the prep time is MAYBE 5 minutes.  Opening the cans is the most time consuming part.

SO, without further ado, here's what I used:

  • 1 can beets
  • 1 can mandarin oranges
  • 1 Tablespoon feta cheese
  • 2 Tablespoons Girard's champagne salad dressing (here's where I'd play around -- you could use any light kind of dressing)
  • 1 Tablespoon chopped basil (mint is another option)

Drain the beets and put them into a mixing bowl.Drain the oranges and add to the beets.Add the basil to the oranges and beets.

Break up the feta cheese over the bowl.  Say, "OH! What beautiful colors!!"Add the dressing and stir GENTLY.

YOU ARE DONE!

Return the salad to the refrigerator and chill until you're ready to pair with your favorite meat!
